The original New York location, nestled in Greenwich Village, sets the gold standard with its intimate atmosphere and historic charm. The dining room's vintage fixtures and tuxedoed captains create an ambiance that transports you to mid-century Manhattan. Here, the spicy rigatoni vodka and veal parmesan taste exactly as they should – perfect in their execution and true to their Italian-American roots.

Las Vegas's incarnation inside Aria Resort & Casino amplifies the theatrical elements Carbone is known for. The space is grander, the service more dramatic, and the presentation even more elaborate. The Caesar salad prepared tableside feels like a performance, though the flavors remain faithful to the New York original.

Miami's outpost in South Beach brings a distinct coastal energy to the concept. The room feels airier, with Art Deco influences that honor its location. While the menu remains largely consistent, the carpaccio del giorno seems especially at home in this setting, and the seafood dishes shine particularly bright.

The Dallas location, the newest of the four, successfully translates the Carbone experience to Texas. The space manages to feel both grand and intimate, with the same attention to detail in service and preparation.
